Short Courses with 1st Leap Training

Here at 1st Leap Training we offer a number of Short Courses to enable anybody to fast track additional skills to their existing skill set. We offer 4 day courses in Bread Making, Culinary Knife Skills, Cooking on a Budget & Basic Food Hygiene. Details of these courses are listed below. In addition to this, any of these short courses can be tailored to suit your individual learning needs and goals.

Short Course in Bread Making

This introductory course is ideal for those who would like to bake healthy, honest bread, but have never tried making bread before, or had a go but ended up with loaves that were 'not quite right'.

You will learn how to knead a basic dough, how the dough should 'feel' in hand and recognise how it behaves during various baking stages.


These 3 essential skills require practice and are the core foundation of successful bread making.

Short Course in Culinary Knife Skills

In this class, you'll learn the techniques which will help you to, not only, chop an onion but finely slice and dice vegetables and herbs.


You'll be preparing a selection of seasonal vegetables and herbs to practice your skills.

Techniques you'll learn will include:

  • the 'rock-chop'

  • julienne (matchsticks)

  • brunoise (fine dice)

  • chiffonade (ribbon cut)

All ingredients will be provided and you'll take away lots of new skills and a printed recipe sheet.

Short Course in Cooking on a Budget

Whether you are a novice in the kitchen or already a decent home cook, creating a plan for what you are going to eat is essential to save you money and develop a healthier lifestyle.

This course has been designed to help anyone who handles, prepares or serves food in the retail industry understand their legal responsibilities and know what constitutes best practice in regards to controlling food safety hazards, controlling temperatures, food storage, food preparation, personal hygiene and premises cleaning.

By law, all food handlers must have an understanding of the basic principles of food hygiene and know how to work safely so as to protect the food they sell from contamination.
